I have previously shared with you how cooking is not my forte. Ok, really it is not my anything. Recently, I met a friend on Instagram +Meredith Lewis, who has a blog, A Little of This and That. On her blog, she posts the most amazing pictures of her cooking and shares her recipes. As I was looking through her posts, can you say cyber stalk, I fell in love with her German Chocolate Dump Cake and wanted to try making this myself. Fingers crossed, this could be a disaster.
Just look at this yumminess. (Yes, it is a word.) This cake was so easy and quick to make and then bake. Here is her recipe:
German Chocolate box mix
1 cup of coconut
1 cup of pecans, chopped
1 stick of butter (softened)
2 cups of powered sugar
1 eight ounce block of cream cheese (softened)
Heat your oven to 350 degrees. In a 9x13 pan, spray a little non-stick spray. Then put the coconut and pecans on the bottom. Mix the cake mix according to the instructions, then pour over the pecans and coconut. Using a mixer, mix together the softened butter, 2 cups of the powered sugar and the softened cream cheese until it is nice and creamy smooth. Put in several spoonfuls (Meredith broke it up into 12 spoonfuls) around the cake batter and take the spoon and swirl it in. Place in oven and bake for 40 to 45 minutes.
I substituted a Gluten free cake mix for the German Chocolate cake mix. I have used this mix before and have had good results. This time was no exception. I followed the instructions.
Mixed everything together and placed it in the cake pan. I was very excited to use my whisk attachment on my mixer.
Doesn't this look good enough to just jump in and swim in the creaminess. Stop it. I swirled this mixture into the cake mix. This was the the finished cake, just before I put it in the oven.
I baked the cake for 55 minutes.
This is a picture of a slice of the cake with a smidgen of powered sugar sprinkled on top.
The gluten free version of the recipe is not as fluffy, the gluten free cake has a more dense texture. This did not effect the end results of the recipe at all. I was telling my handsome husband that this cake tastes like a piece of cake that is served at a high classed restaurant. It was so good. And I made it.
