Gluten Free Baked Parmesan Onion Rings

These gluten free, baked, Parmesan onion rings are a healthy side dish or a quick appetizer.

Usually, onion rings are loaded with calories and carbs. This low-carb, gluten free, onion ring recipe was a success in our home.

Ingredients you will need:
  • 2 large onions
  • 1 cup gluten free bread crumbs
  • 1/2 cup Parmesan cheese
  • 1 tsp. salt
  • 1 tsp. pepper
  • 1 tsp. garlic powder
  • 2 eggs

Directions:
  1. Preheat oven to 400 degrees
  2. Wash and clean the onions. Slice into rings. Remove any skin between the layers of onion.
  3. Combine all dry ingredients together in a bowl.
  4. Stir together your two eggs in a separate bowl.
  5. Dip a single ring, first into the egg mixture, then into the bread crumb mixture.
  6. Place on a parchment lined baking sheet.
  7. Bake for 20-25 minutes. Turn onion rings at the halfway mark, about 12 minutes. Remove from oven when onion rings are browned to your liking.

The onion rings were delicious. The bread coating had a nice texture. The larger sliced onions still had a nice, crispy bite to them. Without being too crisp, as in biting in to a raw onion. 

It will be fun to change and add different spices to the bread crumb mixture. Such as thyme or even spice them up a bit with some paprika. The combinations are endless.
