Gluten Free Vegetarian Stir Fry

Creating and cooking with vegetables as a main dish is what I search for when looking through recipes. Since becoming a vegetarian, I look for recipes that add a "certain zip" to the vegetables. I happened across this stir fry recipe at One Good Thing by Jillee.

I changed the ingredients to make a gluten free sauce to put on the vegetables. I, also, doubled the ingredients because I like leftovers and wanted plenty for the next day. 

The ingredients...with my changes.

Gluten free Vegetable Stir Fry

6 Tbsp of orange juice

4 Tbsp of sweet and sour sauce

2 Tbsp of gluten free soy sauce

1 tsp of sriracha hot sauce

2 Tbsp of sesame oil

1/2 lb green beans halved

1/2 head small red cabbage-sliced

1 15 oz can baby corn-drained and washed

1 red bell pepper

1 8 oz can sliced water chestnuts-drained

2 cups frozen peas

1 bunch of green onions-about 6

Whisk together the hot sauce, soy sauce, sweet and sour sauce, orange juice and set aside.

Add the sesame oil to a hot skillet. Allow oil to heat. As the oil heats. Drain the water chestnuts, drain and rinse the baby corn, slice up the red bell pepper, slice the red cabbage.

When the oil is hit, add the green beans and allow to cook for 3 minutes. Then add 3 tablespoons of water. Cover the skillet, thus allowing the green beans to steam. 

Next, add in the cabbage, baby corn, red bell pepper and allow to cook together for approximately 5 minutes.

Add in your sauce, sliced green onions and frozen peas. Allow to cook until the peas are cooked through.

Serve this as a side dish, or, as I did, serve with rice as a main meal. I did have plenty of leftovers for the next day's lunch and dinner.
I am on the search for gluten free hoisin sauce, to add to the ingredients, for when I make this dish again.
